Indulge your senses in PNW inspired cuisine at Meriwethers' Bistro. Our menu features Certified Angus Beef and Cougar Gold Mac & Cheese.

 

You’ll taste the difference in quality with all of our sauces and gravies made in-house and all vegetables and meats cooked from fresh ingredients (never frozen). Even our tortilla chips and fries are house-made. Don’t be surprised if your dishes include herbs from Executive Chef Kohn’s own herb garden grown onsite.

 

We're located in Lewiston, ID in the Hells Canyon Grand Hotel. Enjoy views of the valley and Clearwater River both from within Meriwether's Bistro and from our expansive patio.

ABOUT CHEF

 

Executive Chef Martin D. Kohn, comes to us from the Salishan Spa & Golf Resort in Lincoln City, Oregon with past executive chef experience at The Hilton, Sheraton and Doubletree Hotels.

 

His 40 year career in food preparation, kitchen, banquet and ala carte operations for hotels, bring a wealth of knowledge to The Hells Canyon Grand Hotel. He has been praised for his ability to lead multi-outlet fine dining and high volume operations. Executive Chef Kohn produces top-quality cuisine with creativity, a passion for food and flawless service.
